The endosperm determines the color of the corn grain. Therefore, white corn has white kernels. White corn contains a lot of sugar and water in the grain, making it sweet and juicy. As corn matures, it loses moisture and converts sugars to starch, making the grain harder. White corn tolerates a wide variety of weather conditions, so it can be grown at any time of the year.
